No Bake Almond Butter Cookies

I love to bake but I also love to NOT BAKE. Sometimes being able to throw a few things in a bowl and have a cookie sitting in front of you within 10 minutes kicks baking to the curb. These FIVE ingredient babes do just that. They are a different take on an OG of the cookie world but have been simplified to the max and upgraded with extra protein + no refined sugar. 

They keep in the fridge and taste perfect just removed and enjoyed immediately.  They're a favorite of my kid's and make a perfect afternoon snack.   I have a feeling you won't miss the warmth of their well known baked counterparts one bit. Enjoy with a booch or glass of almond milk.

1 cup almond flour (or meal, its just personal preference)

6  dates  (roughly 1 cup)

1/2 cup almond butter

2 scoops collagen peptides

1/4 tsp  vanilla bean powder (or 1 tsp vanilla extract)


Add dates to a  food processor or blender + blend  until they come together into almost a paste.

Next, add in the almond flour, almond butter, collagen  + vanilla. 

Process all together in  the blender until well combined.

Spoon out the dough and roll into roughly 1 inch sized balls. 

Place on a tray lined with parchment paper.

Press down gently on each ball with a fork in both a vertical and horizontal direction.

Store in a  glass container in the fridge!

**If the dough doesn't come together easily in the blender, you may need to add  an extra spoon of almond butter or even a dash of almond milk. **It can help to chill dough for 5-10 minutes in the fridge prior to rolling
