Paleo Lunch Bowl

Introducing the easiest lunch bowl evvvveer. I added celery because I had a weird craving for it one day but it ended up giving this bowl so much flavor and crunch. I fully plan on doing it again. And again. Topped this rad bowl of goods off with Simple Mills Everything Crackers and devoured it all. Per usual of my meals, this bowl is barely a recipe but NEVER-THE-LESS a grain free lunch bowl idea you can swap anything in an out of to replicate to your tastings. Enjoy babes.

Ingredients:

2 giant handfuls spinach or spring greens

5 oz organic baked chicken, pulled

1-2 stalks celery, chopped

Trader Joe's Organic Spicy pickles

1/2 avocado diced

white sesame seeds

1 green onion, chopped

Simple Mills Everything Crackers 

Black pepper + Pink salt to taste

 

Instructions:

Layer the greens in the bottom of the bowl. 

Next, add the chicken, celery, pickles and avocado. 

Sprinkle, with the white sesame seeds + green onion.

Season with salt + pepper to taste. 

*If you like spice, you can also season with a dash of cayenne! 

I'm not a big salad dressing person but if you ARE and you feel like you need it, here is a super simple dressing recipe to drizzle:

3 tbsp EVOO

1 tsp dijon mustard

1 tsp apple cider vinegar (or lemon juice)

2 tsp honey

a heavy handed shake of salt and pepper 

SHAKE. 

DRIZZLE.
