Winter Root Salad

I struggle to eat salads in the winter time, it feels so wrong! That's when this recipes slides in to save the day. This recipe will satisfy your hunger for something heavier without leaving you feeling bloated or over-filled. Practice freedom in "following" this recipe... sometimes life calls for a little extra of what you're body is craving. xo Sarah

INGREDIENTS:

  • 3c. arugula

  • 1c. kale, chopped

  • 1c. roasted root vegetables (ex. sweet potatoes, carrots, beets)

  • 1/3c. carmelized nuts (favorites: pecans or sunflower seeds)

  • 1/4c. dried cranberries

  • 3/4c. crumbly goat cheese

  • simple vinaigrette: mix olive oil, vinegar (ex. ACV), dijon mustard, freshly squeezed lemon juice, and a fruit jam of your choice (I love peach to keep it less sweet). I usually start with equal parts of everything then add until I am happy! Add salt + pepper if you choose.

DIRECTIONS:

  1. Layer in ingredients starting with arugula + kale. Optional, chop up greens with kitchen shears to make the salad easier to eat.

  2. Add cooled roasted root veggies, goat cheese, then caramelized nuts.

  3. Add simple vinaigrette + toss

  4. Enjoy!
