Coconut 'No Bake' Fat Bites
These hefty balls are loosely adapted from one of my inspirers, Lee Tilgman of Lee From America. They have that nostalgic taste of the OG no-bake cookies but more coconut flavor and less sugar. Perfect as a topping for smoothies, after meal treats or a late night snack! Dipping in a yogurt is also incredibly tasty.
3/4 cup unsweetened coconut shreds
1/2 cup coconut oil
1/4 almond butter or any nut butter
2 scoops collagen peptides
1/4 cup sunflower seeds
1/4 cup sprouted pumpkin seeds
1/4 cup organic cacao powder
1 cup cashews/almonds/cacao nibs (essential living foods blend is perfect)
1 tsp cinnamon
3 medjool dates
1/3 cup almond milk (or any nut/coconut/hemp milk)
Place all ingredients in a food processor or blender and pulse until combined.
Roll into balls and place on parchment lined tray.
Refrigerate for 10 minutes or until firm then transfer to a sealed glass container to freeze.
They're best when frozen and then softened for 1 minute.
