Vegan Falafel

INGREDIENTS:

  • 2c. lentils (cooked + cooled)
  • 1c. parsley
  • 1c. cilantro
  • 1 clove garlic, minced
  • 1/2 jalapeno, chopped finely
  • 2tbsp. olive oil
  • lemon juice
  • 1tsp. salt
  • 2tbsp. almond flour
  • baking stone or sheet

DIRECTIONS:

  1. Preheat to 350
  2. Mix all ingredients in mixing bowls
  3. Form falafel balls (I make mine about 1.5 in diameter)
  4. Place on oiled baking stone
  5. Bake on 350 for 18 minutes or until they begin to brown
