Coconut Blueberry Muffies

Baking is something I to love to do with my daughter.  She's 4. So anything we can make in one bowl with less than 10 ingredients is optimal. These are that. We like pouring them in our mini 3.5" skillets and each enjoying our own little muffie for movie nights. They pair well with almond milk +`Finding Dory.

Ingredients

1 cup almond meal

1/2 cup unsweetened coconut shreds

1 tsp vanilla

1/2 tsp baking powder

1 egg

1 tbsp chia seeds 

1/4 cup coconut sugar 

1/2 cup unsweetened almond milk

4  tbsp coconut oil

1/4 cup frozen blueberries

Instructions

Combine all ingredients except for blueberries in a bowl.

Gently fold in blueberries.

Pour into an oiled cast iron skillet (8" for one muffie or 3 mini 3.5" skillets)

Bake at 375 for ABOUT 35 min for the 8" skillet, 25 min for the 3.5" skillets. Basically bake until the top cracks and browns a bit. 

Optional: drizzle with honey before or after baking to add a little extra sweetness!
