Dark Chocolate Brownie Skillet

Whipping out a fork and eating this straight out  of the pan is my kind of party.  And we have this party frequently. This babe is gluten free and bakes up in about 30 minutes total from start to finish. Also, per my typical mantra: ONE BOWL.

Ingredients

12 oz organic black beans

2 tbsp almond butter

1/4 cup cacao powder

1/4 cup coconut sugar OR 3 medjool dates

1 scoop collagen peptides (optional but do it)

1 shredded/water strained zucchini

2 tbsp maple  syrup

1/3 cup unsweetened almond meal

1 tbsp almond milk (may need a bit more or less for consistency)

1 tsp vanilla

Dark chocolate chips

Instructions

Add all ingredients, except for chocolate chips, to a blender.

Blend until well combined. 

Pour into an oiled cast iron skillet. (6" + a 2" side kick OR an 8") 

Top  with cacao nibs or dark chocolate chips.

Bake at 400 degrees for about 20 min or until you see cracks. (Every oven is different)
