Detox Salad

Admittedly, when I told my husband I was making a super green detox salad he looked deflated. I can imagine his high hopes coming home from along day at work being demolished after finding out we were A. having a salad and B. it seemed like a pretty girly salad. Needless to say, I proved him wrong and my manly-man hubs loved it! I call it a detox salad.

INGREDIENTS:

  • 3c. kale
  • 2c. broccoli florets,
  • 2c. brussel sprouts
  • 2c. fresh parsley
  • 1/4c. sunflower seeds
  • 1/3c. walnuts
  • 8 chopped scallions

FOR DRESSING:

  • juice from 2 lemons
  • 3 tbsp. olive oil
  • 3tbsp. dijon mustard
  • 1tbsp honey
  • 2tbsp fresh grated ginger
  • 2 pinches sea salt

 

DIRECTIONS:

  1. Rough chop all the greens + add to large serving bowl
  2. Add sunflower seeds + walnuts and toss
  3. Whisk together dressing ingredients (feel free to add more of any ingredient to get a flavor you love... I always add extra ginger!)
  4. Toss salad + dressing together and enjoy!
