Brunchy Southwestern Sweet Potato
All the flavor. This meal is one of the most satisfying brunch meals and is beyond EASY. Plus you can make it for one or simply multiply and serve for a group. It's called brunchy but makes a perfect dinner too.
1/2 steamed sweet potato
1 tbsp Better Bean Cuban Black Beans
1/2 chopped zucchini/yellow squash
1/4 cup chopped bell peppers
1/4 cup steamed chopped broccoli
Seasonings: Garlic powder, smoked paprika, pepper, pink salt, cumin, chili powder + cayenne
Fry egg in ghee/avocado oil.
Saute zucchini, peppers m broccoli together in avocado oil, seasonings + lime.
Warm beans in pan.
Plate sweet potato. Pile up with veggies, beans + egg.
I like topping with extra cayenne, avocado and salsa.
