Parmesean Crusted Zucchini

My mom used to fry us up zucchini with tons of breading and parmesean. I thought we were SO HEALTHY when we did this! Ah, those were the days! Here is my grown-up version of that childhood memory!

INGREDIENTS:

  • 3 zucchini
  • olive oil
  • fresh parmesean
  • salt and pepper

DIRECTIONS:

  1. Slice your zucchini thinly and arrange on a baking sheet in one layer
  2. Drizzle olive oil + a few pinches of salt and pepper
  3. Top with fresh grated parmesan cheese
  4. Bake on 400 until they begin to brown
  5. Enjoy!
