A N Y T I M E. Omlettata in the morning, omelettata in the evening, omelettata at suppertime. (All the 90's babes/bagel bite fans get it) This beautiful and filling dish is fantastic anytime of the day. Breakfast, brunch, lunch, dinner. Very little prep and very little cook time. You need it.
3 tbsp PLAIN almond milk
Pink salt + black pepper
1/2 cup chopped bell peppers
1/2 cup chopped zucchini
1/2 cup steamed broccoli
1 large handful spinach
Saute all veggies (except spinach) in an 10" cast iron.
Scramble eggs in a glass and pour over the sautéed veggies. Sprinkle with salt/pepper to taste.
Cook over medium for about 3-4 minutes.
Transfer to oven and broil until fluffy and just slightly browning.
Serve with avocado, salsa + cayenne (if you like spicy). Good for one with leftovers or a small brunch group.
