Collagen French Toast
French toast takes me back. Back to my mom dipping wonder bread in egg + milk + sugar. Oh, my. (No shade mom, it was the 90's.) This is a grown-up version that kids will appreciate too. The collagen takes it to the next level with added nutrition. I use chia seeds, a bit of pure maple syrup + blueberries to top but topping options are obviously endless. What do you adorn your french toast with?
4 slices bread (I like Silver Hills sprouted King's Bread)
2 organic, pasture-raised eggs
2 scoops collagen peptides
1/4 cup almond milk
1/4 tsp cinnamon
1/4 tsp vanilla extract
2 tbsp maple syrup or 2 tbsp coconut sugar (optional)
Scramble eggs, milk, cinnamon, collagen, + maple syrup (is using).
Dip + completely cover slices of bread into the batter.
Place onto a cast iron skillet heated over medium.
Flip after 1-2 min or when bubbles appear.
Plate all the super-hero-french-toast slices and top with anything your heart desires.
Our favorite toppings: Pure maple syrup, chia seeds, almond butter, honey, blueberries, strawberries, dark chocolate chips, more cinnamon or chopped nuts.
