Cauliflower Enchilada Bake
Plant-based, one pan and 30 minutes of baking. This dinner is one of the most satisfying. I love making it for a group because it makes a lot and even the biggest carnivores are satisfied by this dish. Plus it's another family style meal that you can place on the table, pass around + dip out of.

Ingredients:
2 cups cauliflower florets
1/2 cup black beans
1/4 cup organic corn
1 stalk green onions
1/2 cup chopped bell peppers
3 tbsp chopped cilantro
1/2 tbsp cumin
1/2 tbsp chili powder
1 clove garlic minced
1/2 cup enchilada sauce
Mozzarella (Rumiano is my favorite)
Instructions:
Roast cauliflower florets 30 min on 375 degrees.
Combine cauliflower, beans, corn, peppers, spices, green onions and enchilada sauce.
Top with mozzarella.
Place in a glass baking dish and bake on 350 degrees for about 20 min. OR until cheese bubbles.
