Buckwheat Collagen Waffles
An excuse to get out my waffle maker... Yes. A meal my whole family will eat... Yes. Buckwheat is naturally gluten free and brings the FLUFF. I love sitting a giant tower of waffles out on the table and watching it shrink as everyone grabs one and then another. Strawberries + maple syrup are our favorite toppings.
1 cup buckwheat flour
2 scoops collagen peptides
2 tbsp coconut sugar
1 1/2 tsp baking powder
1 tsp baking soda
dash of pink salt
1/2 tsp cinnamon
1 1/4 cup "buttermilk" (recipe below)
1/4 cup melted coconut oil
1/2 tsp vanilla extract
1 1/4 cup vanilla unsweetened almond milk
1 tbsp + 3/4 tsp apple cider vinegar
Combine buttermilk ingredients and let sit for 5 minutes.
In a separate bowl, combine flour, collagen, cinnamon, sugar, salt, baking powder + baking soda.
Whisk the egg + vanilla into the "buttermilk" mixture.
Combine wet + dry ingredients gently until only a few lumps remain.
NOW add the coconut oil and lightly whisk again until well mixed.
Pour onto pre-heated + oiled waffle maker.
Add the coconut oil after everything is all put together to keep it from getting too cold and lumping up. It's rough waffling when that happens.
