Sandra's No-Bake Cookies

My mother-in-law started making these sinful cookies that I became addicted to. Okay, okay... they are far from sinful, the ingredients are actually spectacular! However, they are really delicious and that, my friends, is what makes them sinful.

I spent some time in the kitchen trying to figure out how to make them less calorie dense. I love clean-sweets, but at the end of the day, they are usually just as calorie dense as a regular treat. It is always better to eat natural ingredients, however, "clean sweets" won't keep your pants from getting too tight! 

I have posted the "recipe" below. We don't measure because we've found we need to add a little of thise and a little of that each time... I gave you a good jumping-off point, then it is up to you to get your "perfect" cookie. They are simple and impossible to mess up!

This is the most UnRecipe recipe I've ever made...

In a mixing bowl... add 1/2c natural peanut butter, 1/4c melted coconut oil, and 1/8c plain almond milk. Mix ingredients until combined. Add organic oats 1 spoonful at a time and mix... add as many oats as possible without the mizture losing its stickiness.

*Mix and taste your batter before putting into the freezer... you want the mixture to be thick and sticky. Add peanut butter to make the mixture thicker. And oil or milk to thin it out. Do not sub the coconut oil for anything... the oil is what hardens the cookie. Read below for tips on how to make the cookie sweeter/more flavorful :)

Spoon out mixture onto wax paper and form your cookie shapes with your fingers. Put cookies into your freezer (laying flat, uncovered) and freeze for 2-3 hours. Remove cookies from the wax paper and store in a closed container in your freezer!

Make the cookies chocolatey... add cacao powder to the mixture before you add the oats.

Make the cookies sweeter... add maple syrup to your mixture to make them sweet! (Adds carbs, sugar, and calories)

Make the cookies nutrient-packed... add adaptogens or collagen powder to your mixture.

Make them SINFULLY GOOD... omit the almond milk! (This is my favorite method, but I have to be mindful to only eat 1-2 a day)
