Beachy Teal Smoothie
I've been making this smoothie for awhile but felt the need to share as I'm missing those deep teal waves of the Caribbean. The color and flavor are reminiscent of beachy days taking in the endless teal ocean. And I think we all could use a little beach in our lives right now. This lovely is full of healthy fat, lean greens and clean protein so it hits all the macronutrients (carbs, fat, protein). As always, I finish it off with a smudge of nut butter... this time I used chunky, honey peanut butter. (OH MY GOSH) Enjoy babes.

Ingredients:
1 cup - 1.5 cup unsweetened coconut milk (homemade is easy/fantastic)
1/2 cup frozen cauliflower
1/2 cup frozen coconut chunks (Trader Joes)
1 scoop vanilla protein powder (I like Aloha or Sprouts Vegan Powder)
1 cup blue kale (fresh or frozen)
1/8 cup frozen wild blueberries
1/8 cup fresh pineapple
2 tbsp full fat coconut yogurt
Small handful of ice cubes
Instructions:
Add ingredients to blender + blend on high until smooth!
Top as desired and serve immediately.
Suggested toppings: Shredded coconut, chia seeds, nut butter, blueberries, strawberries, cacao nibs.
** Depending on your blender you may have to add the ingredients a little at a time and blend in small batches to be able to achieve a smooth texture. Vitamix you can throw it all in at once. **
